Adopt a Gluten-Free Blogger–Ginger Lemon Girl

I’ve been meaning to adopt Carrie, the Ginger Lemon Girl for a long time, and yet somehow between the house showings and movings and chaos, I missed the deadline last month, so here’s my chance!

Carrie is an absolute darling, and I’ve ‘known’ her via blog for a few years. Her kindness and enthusiasm for yummy gluten-free food shines through most of her posts. She’s a gifted baker, and also a wonderfully expressive writer. For more of her “life thoughts” there’s also her Gluten Free Strawberry Blog. And, of course there are so many ways she supports the gluten-free community, like her yahoo group and Wilson area support group.

I’ve tried many of the recipes on Carrie’s blog, and it’s one where I *know* I can just select any recipe and it’ll be a winner. I have to say her Chocolate Chip Cookies are the winner of all winners–my husband and one of my co-workers are so addicted to those it isn’t even funny. Each time I make them, DH’s comment is, “when is she writing her cookbook?” So Carrie, you’ve got at least one pre-order already.

The Master Mix makes things easy, and I’d recommend keeping some of the ingredients for her pancakes all ready, too, just in case of a pancake emergency.

Looking through her recipes, I can’t wait to get into my new kitchen and try some others! I’ve been eying the vegan chocolate muffins for a while.

Simple Meals-Menu Plan June 6th

We are currently mid-move!  Our old house is sold and we’re in a hotel, waiting for move #2 into our new house.  Contrary to the picture above, it has not been as peaceful as we’d hoped, but we only have a handful of days to go.  Whew!

Life has been busy.  My days have been filled with work, getting out the word on the Celiac and Gluten-free Videos and even writing a post for the Washingtonian as part of their food diary series. This week the diarist was a mostly vegan, gluten-intolerant athlete.

And of course, with all of this, eating has been a challenge.  We have a kitchen, it’s small and there’s no stove.  Nor is there a good cutting knife.  Man I’m spoiled!  So I am working on ways to adjust my cooking prep style to accommodate.

Monday
Greens, beans and olives w/pesto

Tues:
Salmon on a bed of baby greens

Weds:
Fennel and beef sauteed in tomato sauce

Thurs:
Last night before new house! some kind of celebration (hint, hint. E, if you’re reading this, that means ask me to go out to dinner. K?)

Claire of My Gluten Free Home joins us for the first time (I think?) She’s got risotto on the menu, which I love, and she also has a sweet love note of a sort on her husband and his appreciation of simplicity. She’s also got a cookie recipe from earlier this week…so go check out her blog.

Do you know that Carrie of Ginger Lemon Girl has 3 crockpots? I think that makes her the crockpotting queen! She’s got a nice layout of her week, including breakfasts, lunches, dinners, snacks…even lunchboxes! And I’m hoping to hear more about the sweet potato side dish.

Heather of Celiac Family is a mama to a 6 and 8 year old and they tend to favor simple foods. She’s got a kid’s choice night on the menu, and garlic shrimp chicken. I do always appreciate her pictorial meal plan, too.

Angela’s kids are almost out of school and that means a trip to the zoo, track and field day, etc. There’s pulled BBQ pork on the menu and that is one of DH’s very favorite foods.

Scrumptious of In my CSA box has a vegan and GF menu, as usual! She has a “kaleful” week planned. This is the first time I’ve used the word “kaleful” in a sentence, but hopefully not the last. Love the idea of red lentils with kale and coconut.

Menu Plan for a Move!

First things first: the Celiac Disease and GF Diet videos are out! I am delighted to share them at long last and would love to hear your feedback.  As many of you know, they’ve been a labor of love during the past year and a half, from funding to coordinating to editing! I think they turned out quite well, I look awfully nervous in the intro but stick with them–there’s some great info. I am very grateful for the many people gave so much time, energy and effort to making this project happen and of course, Celiac Sprue Association funded the video production.  If you have thoughts for ways to spread the word, let me know!

Onward to the week: We’re moving out.  Today.  And not moving in for another 11 days.  It’s a mix of overwhelming, busy, stressful, sad and hopeful, too.  We’ve been here 8 years, and it’s hard not to get nostalgic.  I have to say goodbye to my garden, my raspberry & blackberry plants, which will be fruiting in, oh, about 5 days (nice timing, right?).  When we moved in, I was an entirely different person–different last name, different job, different passion, different foods, different health circumstances…same cats, same dude.  It feels like a very big transition.

And nothing make transition easier than good food, which feeds in nicely to Wendy’s theme of Seasonal Food. As always, Wendy has a great rundown and I appreciate her stepping in as hostess. I do have some kale left from last year, which was way stringy, and more partially mature garlic than I know what to do with.  It’s roasting in a pool of olive oil as we speak.

I seriously need to figure out food this week because we will have a stovetop, but no oven. Here goes:

Mini Menu Plan

Many thanks to Heather of Celiac Family who stepped in again as MPM’s host!  I spent the weekend at a silent retreat, and was thinking maybe I could swing it when I got back—riiiight. I did truly enjoy my time away, but came back to packing boxes, appointments with the electrician and a mile long to do list.  And calling all hosts for next week!  Most likely my computer will be in a box at our temp “human storage” spot.

The flowers are my birthday flowers!  Kudos (&positive reinforcement) to DH for getting them for me.

This week will be haphazard, with much of my kitchenware already packed.  And I’m allergic to corn so I won’t be including that this week.

Sincere Gratitudes and a Meal Plan

I am overwhelmed with the good things in my life!  The Celiac Disease Videos are out this week, I have a posting of a video I did on “Let’s Talk Live” on Gluten Sensitivity.  But by far and away, I am so grateful that we’ve found a wonderful house to life in.

Those who follow my blog a bit know I have my share of physical challenges, and buying a 2 or 3 floor house was scary gamble for me.  And yet as always, we were able to find a house that I love–and one where I can be realistic about my body’s needs and be surrounded by beauty, too.  Hiking used to be my favorite thing, and every week in grad school, I was off to find new parks and trees to make friends with.  Well, now I have a wonderful house surrounded by beautiful old trees.  If I can’t easily go to the forest, the forest can come to me.  I feel so lucky to have kept the things that are so core to my heart and soul despite everything, and I am so grateful for my husband’s support in making this possible.

And of course, there should be plenty of room for a big garden, too.  The gorgeous trees will limit some of the sun, but it’ll work and I’m sure we’ll have wildlife to share with as well.

Now someone just needs to tell our feline contingent that the mad house rush is almost over and as soon as we move, it’s time to come out from hiding under the covers. Hopefully we’ll move mid-June.

Our kind hostess is Heather of Celiac Family. She’s chosen rice, and I’m allergic. Bummer. And I do keep rice around because my husband eats it, and it’s a common ingredient in many recipes I’ve been asked to test, but I get a worse reaction from it than almost anything but gluten.

On to food! We’ve got to empty the freezer ASAP.

Cinnamon Glazed Walnuts

Mmmm….I love nuts.  What’s not to love, really?  Delicious, portable, lots of variety…And of course, walnuts have nutritional benefits, with some ALA, which is a kind of omega 3 fatty acid.

And I’ve always been a fool for nuts with cinnamon and sugar.  So I’ve played around with a few variations, and really adore these gluten-and sugar-free vegan beauties, because I wanted to make them using coconut palm. I just adore the flavor! And, of course, part of the fun is getting the piece that’s got the caramelized sugar clump–I’m sure you understand.  The only hard part is not eating too many…

I’ve made a small batch because it’s key to have a skillet that conducts heat well, and my All-Clad is pretty small.  So funny how I revere certain pieces of kitchenware–ya know, the Vitamix, my All Clad skillet, a lot of my mini-bake pans…the older I get, the more expensive my toys, it seems!  But I digress.

These are delicious, so give them a try.  And here are a few other glazed or sugary nut recipes I’ve enjoyed in the past:
Elana’s Cinnamon Pecan Brittle
Amy’s Spicy Roasted Cashews
Spicy Candied Walnuts

1.5 cups walnut halves (I’m sure you could use another nut)
1/4 cup coconut palm sugar
2 TBSP water
1 TBSP agave
1 tsp cinnamon
1 tsp coarse sea salt

Toast walnut halves over medium/high heat until they start smelling yummy. Remove from pan. Sprinkle coconut sugar into the pan, which should start to ‘melt’ instantly. Stir, add water. Add back the toasted walnuts, add in the agave, cinnamon and salt and stir until well combined. Pour onto parchment paper.

Allow to cool, if that’s your thing. These can be frozen.

A mini meal plan

What a week!  Lots of fun posts, and if you didn’t see Easy Meals, G-free Style, do check it out!  It’s one of my best-appreciated handouts, and is a part of Diane’s 30 Days of Easy Gluten-Free living, which has fantastic resources.  Diane also was kind enough to feature me in her “Food Rock Star” series, which was a lot of fun.

Life here has been really crazy.  Our house is under contract, but we haven’t found one we want to buy yet…leaving us in limbo with 2 cats.  I look forward to sanity sometime soon…but until then, there are boxes to pack!

This weeks’ host is Carrie, the Ginger Lemon Girl and she’s chosen garden peas, which are super yummy.  I’ll be having those raw, because it’s easy.

And that’s the theme for this week.  Easy.  I’m very aware of how stressed I am, simply by the uncertainty and knowing how much is ahead of me (and, of course, we had company this weekend so I’m catching up).  I’m really intent on finding a balance and taking as good care of myself as I can…while taking care of as much as we need. Self care is a huge part of my life, and has been for years, and yet times like this require a reinforced commitment.

We’ll be using up freezer contents as much as possible, so this certainly isn’t a normal week.

Easy Meals, G-Free Style

First, a big round of applause for the delicious Diane Eblin for hosting this fun series, 30 Days30 Days to Easy Gluten Free Living of Gluten-free Eating. If you don’t know Diane, you should!  She’s always hosting neat events that bring people, information, passion and resources together.  She was even kind enough to make me her “Food Rock Star” a few days ago, which was quite an honor.

The posts in the 30 days series have been great info–so far, grocery shopping tips, getting started, smoothies, and I’m planning to make yesterday’s Cherry and Almond Power Bars ASAP!  And of course, the key to gluten-free blogging is that through sharing our combined interests, passions, ideas, experiences, friendship and of course, recipes, we make it easier for anyone with Celiac or gluten-intolerance to live well.

Easy meals are key. They’re vital when you’re just getting started, but I’m a strong believer that everyone should have a few meals they can whip up in 5-10 min or less just in case–because life happens, we do occasionally burn something, have something go bad, drop dinner, find the cat lovingly licking the salmon, whatever. We’re talking meals that fall into the category of assembly rather than “cooking” per se.

Just an example–we’re selling our house and thus cleaning out the freezer and pantry, so I have less on hand than usual. I went to make dinner on Friday and the broccoli was brown and icky. Grrr. So plan B. No frozen broccoli. OK, plan C. Make a vat of greens and make Coconut Curried Greens. And as I admired the luscious smelling pot, the sauce was too thin, so I thought I’d thicken with some coconut flour. Long story short, instead I added brown rice flour, which I’m allergic to. Believe it or not, I’ve not done that before in 7 years.

And there I sat, looking at this glorious pot of greens which was totally off-limits, and knowing that I didn’t have something quick in the freezer to thaw.

OK, woman on a mission! On to plan D, AKA the pantry. Cannellini beans, tuna in olive oil, drained canned diced tomatoes (I love Eden brand–BPA free), a few Kalamata olives and a few fresh basil leaves. Super quick, super easy, and very, very yummy. Massive feline approval, too, which is not always a plus. Cheryl does the happy dance, and even has enough for leftovers the next day.

So what is on your list of simple easy pantry staples? Here’s a list of 50+ ideas I give clients to get thoughts moving:Basic GF Meals 2011 Now, I have clients ranging from ardent carnivores to hardcore vegans, and I do have a dairy-free list too, but the point of the list is that anyone and everyone can find a few things that either fit, or inspire other thoughts. Everything on the list is SIMPLE, accessible, and contains very few specialty items, because many folks aren’t huge cooks beforehand and are looking forward to survival. And I figure if you can get the point of a recipe across in 2-3 lines, it’s pretty easy.

And the most ironic part?  Shirley of GFE has a list of 50 easy gluten-free meals on her site, too, and we have very few overlaps, so that puts you at about 100.

Menu Plan Monday May 2nd

Happy Celiac Awareness Month! But if you’re here, you probably already know that. Some people celebrate Sept, May. Whatever. I vote that all months should be Celiac Awareness month until we get most, if not all, Celiacs diagnosed! There’s the often quoted statistic that 97% of Celiacs are undiagnosed, and I’ve repeated that myself. It was Mary, director of the Celiac Sprue Association, who pointed out that that figure has been around for years, while diagnosis and awareness has increased dramatically. Whatever the number, we’ve got a long way to go!

Last week was a hectic one, between showing the house, visiting houses, working…and fun squeezed in here and there. I did make Alta’s kick tush pizza crust not just once, but twice! One word: wow. And my Daring Baker challenge was less than glorious, but tasty.

This week, I’m making a conscious effort to scale back wherever possible. I’ve got a lot of clients, AND my in-laws will be in town, AND for some reason (without thinking) I taught on Saturday, saw clients on Sunday and am seriously in need of a weekend…alas. And not a weekend with guests and house-showing! It’s that delicate dance of obligation and self care, and I’m sure many of you can relate.

Our dear hostess for this week, Angela of Angela’s Kitchen, has chosen the epitome of spring: Asparagus! Fortunately, Ricki hosted an asparagus SOS challenge, so I’ll need to refer there for inspiration.

Daring Baker Tasty Goop

Hmmm…I think the title sums it up!  I missed last month’s Daring Bakers, and I didn’t want to miss out on more.  And yet, I’m trying to keep baking to a minimum because we’re showing our house.  Quite a balance!

The April 2011 Daring Bakers’ challenge was hosted by Evelyne of the blog Cheap Ethnic Eatz. Evelyne chose to challenge everyone to make a maple mousse in an edible container. Prizes are being awarded to the most creative edible container and filling, so vote on your favorite from April 27th to May 27th at http://thedaringkitchen.com!

This wasn’t a stellar challenge for me.  Essentially, I tried making a vegan, soy-free mousse, and got yummy goop.  But it wasn’t firm enough to put into an edible container, so I didn’t end up doing that element.  I know, I know.  Next month!

What I did make:
1 cup macadamia nuts, raw
1 cup water
1 TBSP maple syrup (I ran out…)
1/4 cup agave
1 tsp agar agar powder
1/2 tsp vanilla powder

Blend really well in a vitamix, chill & serve!

The un-mousse sauce is yummy on fruit, vegan, sugar-free and delicious. If I had to do it again, I’d use more macadamias and more agar for a firmer consistency.
